Every year in late spring, Eastern Hemlock trees put out a flush of new growth. This FOREST PATH salame is made with these delicate little tips that we pick from the forests of our New Hampshire farm. A vibrant, electric yellow-green color, Hemlock tips are fresh-tasting and citrusy, perfect for welcoming in the warm weather that arrives right around the same time. Pair this with an ice cold session IPA or pilsner while basking in the sunshine.
